It falls apart on contact, too frequently has very large air holes in the slices, and is expensive. It is good toasted. I also like that the slices are large, so that I eat one slice, halved, for a sandwich for fewer calories. Tastes good. Even has fiber! I recently tasted a gluten free bread brand I like at a restaurant.

I found a local bakery that bakes long fermentation sourdough. The jury is out on whether this is good for super sensitive Celiacs like myself. But the research is really promising — apparently the longer the fermentation the less Gluten.
